    A Tex Mex Fiesta

    We'll begin with Empanadas; a pastry filled with beef, tomatoes, potatoes and herbs. Flautas are next with chicken in a jalapeno and garlic paste fried crisp in a corn tortilla. We'll then prepare authentic Mexican rice made with onions, garlic, tomatoes and fresh cilantro along with Mexican style corn prepared with lime aioli, cayenne pepper and Cotija cheese. Fajitas follow with tender strips of marinated beef and chicken with fresh sautéed bell peppers and onions wrapped in a warm tortilla shell. We'll finish the fiesta with a Yucatecan-style delight; a fresh coconut blended with rich custard in a wonderful nutty crust, baked to a caramelly brown, and served with creme fraiche.     Basic Home Food Preservation

    With the growing season nearly upon us, it's time to learn the basics of home preservation. Homemade jams, spicy salsas, fresh beans and fermented cabbage can all be enjoyed during the cold winter months. Home canning of fresh food provides a number of benefits, including lower grocery bills, sustainable lifestyles and better nutrition through control of the ingredients that go into your food. Once you know the basics, home canning is really quite easy. This class will introduce you to the tools/equipment, food safety and produce/ingredient selection needed to be successful this season and for many years to come.
  • CHICKEN MARSALA VS CHICKEN LIMONE – (Participation)

    Begins with bruschetta topped with fresh mozzarella cheese, skinned roma tomatoes and sweet roasted bell pepper sprinkled with fresh basil and drizzled with olive oil. You’ll prepare “Chicken Marsala” with fresh sauteed mushrooms in a sweet Marsala butter sauce. We’ll see how that measures up against “Chicken Limone” topped with a chardonnay, lemon, butter sauce with capers. Both entrees are paired with "Spaghetti Aglio Olio", tender garden vegetables tossed with olive oil, garlic, and Romano cheese. We'll finish with "Diplomatico", a divine combination of rum and espresso soaked pound cake, rich chocolate mousse and fresh whipped cream. Class partnered with Eden Prairie Community Education.

    Dim Sum is a beloved Chinese dining tradition featuring a variety of small appetizers, with dumplings being a crowd favorite. One of the most popular dumplings? Pot Stickers! In this exciting new class, Tess will guide you through the step-by-step process of making delicious homemade Pot Stickers, complete with handmade wrappers that will elevate your culinary skills. You'll learn how to make a flavorful pork or chicken filling, craft a delightful dipping sauce, and even get tips on freezing your Pot Stickers for future meals. For those looking to fully embrace the homemade experience, you'll have the option to make your own wrappers, though store-bought alternatives are welcome too. By the end of this class, you'll be ready to make Pot Stickers so good, you'll never want the store-bought version again! Thai Street Food Monday, January 13, 6-8pm Thai cuisine is full of aromatic ingredients, cooking styles, and dish decorations. In this interactive online class, we’ll make three popular and delicious; Thai dishes from Thai vermicelli salad, Thai coconut soup, and pad Thai with chicken. Vietnamese Street Food Monday, March 3, 6-8pm Embrace the light and delicate flavors of Vietnamese cuisine known for fresh herbs, vegetables, and dipping sauce. In this online interactive cooking class, we’ll make Vietnamese fresh rolls with dipping sauce and Vietnamese noodle soup (pho) with chicken. Hand-Pulled Noodles from Scratch Monday, March 31, 6-8pm Hand-pulled noodles are so much fun and they are much easier to make than you would think. In this online interactive class, you will learn 2 different techniques to pull noodles. We will make 2 types of hand-pulled noodles: Biang Biang and Lamian noodles. We’ll turn Biang Biang noodles into a noodle salad with chili sauce. We’ll turn Lamian noodles into miso noodle soup. Mexican Tacos Monday, May 5, 6-8pm Mexican tacos are as vast and diverse as the country. In this interactive online class, we’ll start by making flour tortillas from scratch.     They are beautiful and so fun to make! Your instructor will show you some simple tricks to make the process easy. We will make three different kinds: lovely blueberry, lemon, and pink cherry or strawberry. There will also be some chocolate macarons for you to sample. Students will bake and assemble one recipe from start to finish, as well as decorate and assemble the other two recipes. You will be the talk of the party when you serve these little delicacies!     Sourdough became popular over the last year as a healthier alternative to regular white or whole wheat bread. Although it has comparable nutrients, the lower phytate levels mean it is more digestible and nutritious. The prebiotics also help to keep your gut bacteria happy, and it may be less likely to spike blood sugar levels. Come to this class and make a dozen sourdough muffins and go home with a small amount of starter to continue making sourdough bread. Bring a quart glass jar with a lid to class.

    Come for an evening of making the classic Limpa Rye Bread and the chocolate cake Kladdkaka. Limpa is a classic Swedish rye bread with a tender crumb and a hint of fragrant orange and anise seed. Perfect for sandwiches, soups or with a bit of butter. Limpa is a staple in Swedish Cuisine. Kladdkaka is similar to American Brownies but different at the same time. It’s a dense, rich chocolate dessert with a crip exterior and a soft gooey interior.

    Tantalizing Thai Cuisine (Participation)

    You’ll begin by preparing Vietnamese summer rolls (fresh) served with both hoisin and peanut sauce for dipping. Included are Vietnamese spring rolls (fried) with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles, breast of chicken, eggs, chilies, garlic, basil, scallions, bean sprouts, and more. For dessert, Thai lime custard topped with fresh whipped cream. Class partnered with Eden Prairie Community Education.
  • Traditional Italian Cuisine (Participation)

    Enjoy traditional Italian favorites beginning with classic panzanella, a toasted bread salad with refreshing summer vegetables in a light vinaigrette. You'll prepare the celebrated chicken saltimbocca using thins slice prosciutto ham and fresh sage topped with a lemon caper butter sauce and pan fried artichokes. You learn the art of potato gnocchi, shaped potato dumpling, tossed with a medley of amazing sauces including fresh basil pesto, marinara, and brown butter with sage. We'll finish with cannoli, fired pastry filled with sweetened ricotta and mascarpone cheeses, served on a pool of warm chocolate sauce and garnished with chopped pistachios.     Just in time for Valentine's Day! Although they can be made any time of the year. These rich, chocolaty delicacies make wonderful gifts...if you can part with them that is. We will make five different kinds of truffles and decorate them with beautiful trim. Each student will go home with a nice box of finished truffles.     Come and join in a hands-on experience to learn, prepare, and taste Chinese-American style egg rolls and summer rolls. We will cover the types of wrappers used, different filling ideas, rolling techniques, and ways to cook them. By taking this class, you’ll have a greater appreciation for the variety of egg rolls that there are, as well as how to make them at home.
