    Basic Home Food Preservation

    With the growing season nearly upon us, it's time to learn the basics of home preservation. Homemade jams, spicy salsas, fresh beans and fermented cabbage can all be enjoyed during the cold winter months. Home canning of fresh food provides a number of benefits, including lower grocery bills, sustainable lifestyles and better nutrition through control of the ingredients that go into your food. Once you know the basics, home canning is really quite easy. This class will introduce you to the tools/equipment, food safety and produce/ingredient selection needed to be successful this season and for many years to come.
  • CHICKEN MARSALA VS CHICKEN LIMONE – (Participation)

    Begins with bruschetta topped with fresh mozzarella cheese, skinned roma tomatoes and sweet roasted bell pepper sprinkled with fresh basil and drizzled with olive oil. You’ll prepare “Chicken Marsala” with fresh sauteed mushrooms in a sweet Marsala butter sauce. We’ll see how that measures up against “Chicken Limone” topped with a chardonnay, lemon, butter sauce with capers. Both entrees are paired with "Spaghetti Aglio Olio", tender garden vegetables tossed with olive oil, garlic, and Romano cheese. We'll finish with "Diplomatico", a divine combination of rum and espresso soaked pound cake, rich chocolate mousse and fresh whipped cream. Class partnered with Eden Prairie Community Education.
  • Focaccia, Stromboli & Calzones! Oh My!

    What makes a Focaccia a Focaccia, a Stromboli a Stromboli, and a Calzone a Calzone? Discover the unique differences and similarities in this fun, hands-on Cook-Along Class! Dive into the delicious world of rolled and stuffed pizzas and learn to make **homemade Focaccia Bread**, a flavorful **Stromboli**, and **Calzones**—all from scratch with homemade pizza dough. Under the expert guidance of the instructor, you’ll master: Stromboli: A rolled, filled pizza Calzones: Stuffed pizza pockets Focaccia Bread: Fluffy and flavorful with a perfect crust Plus, an out-of-this-world pizza sauce to complement your creations! You’ll work with two different types of homemade dough—one for the pizzas and another for the focaccia. With step-by-step instruction, the process is simple and enjoyable. Impress your family and friends with restaurant-quality results, and you may never order takeout pizza again! Participants will receive a list of ingredients for the cook-along recipe, at least a week in advance of the class to allow time for shopping and prep. This class will take place on Zoom; a free on-line software. Participants will receive instructions on how to access the class prior to it starting. Note: Instructors recipes are copyrighted and are only shared with those who register for this class. Refunds CANNOT be issued once the recipes/class documents are shared. One registration fee for this on-line Virtual class can include participants from the same household only. If children are participating, adult supervision is required.
  • Korean Fried Chicken-Virtual

    Korean fried chicken is addictively delicious. It is also super easy to make at home. In this online interactive class, we’ll learn how to make two styles of Korean fried chicken without deep-frying. We will make stir-fried Korean chicken served with steamed rice and baked chicken wings with an addictively delicious sauce. We will also make some delicious side dishes, including coleslaw and pickled vegetables. You will receive a list of suggested side dishes that you can grab from Asian grocery stores as well.     North Indian food has bold and rich flavors from ghee, cream, and spices. Let’s learn how to layer flavors using different spices. We will make chicken tikka masala, aloo masala, spiced rice, and tomato raita. Please watch your email for a link when the class date gets closer.
  • Oh, You Beautiful Cake!

    What could be better than chocolate, caramel, pecans, and more? In this class you will mix, bake, and assemble a decadent 3-layer cake. With guidance from Nancy, each student will create and take home a deliciously gooey chocolate masterpiece, perfect for sharing with family and friends-if you can resist keeping it all for yourself! Supply Fee of $16 per student payable to the instructor in class.
  • Scandinavian Gourmet Dinner

    From those northern countries of Sweden, Norway, Denmark and Finland, we will create an assortment of superb entrees and desserts balanced with a soup & salad but NO lutefish! A larger class will include 14 recipes with fewer ones for smaller groups. Dishes may include: *Apple Stuffed Pork Loin *Swedish Meatballs *Salmon with Dill & Lemon *Cold Poached Salmon *Carrot Casserole *Spinach Soup *Pineapple Beet Salad & Cheese Sticks *Rice Pudding *Toska Cake *Finnish Nut Logs *Raspberry Ribbons *Oatmeal Wafers and a famous Fruit Soup Supply fee of $17 due to instructor in class.

    Tantalizing Thai Cuisine (Participation)

    You’ll begin by preparing Vietnamese summer rolls (fresh) served with both hoisin and peanut sauce for dipping. Included are Vietnamese spring rolls (fried) with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles, breast of chicken, eggs, chilies, garlic, basil, scallions, bean sprouts, and more. For dessert, Thai lime custard topped with fresh whipped cream. Class partnered with Eden Prairie Community Education.

    The Art of Sushi

    Come explore the world of sushi as you create this Japanese delicacy yourself. We'll begin by preparing the coveted sushi rice then you'll learn the art of "nigiri-sushi" (hand molded rice) topped with shrimp, unagi and ahi tuna. You'll then learn how to prepare "maki-sushi" using a bamboo mat to roll rice with various fillings in and around Nori (seaweed sheets). Option and accompaniments will include: surimi, cucumber, avocado, cream cheese, teriyaki chicken, tempura onions, spicy mayo, eel sauce, wasabi, pickled ginger and soy sauce. This class is taking place at Eden Prairie High School. Enter through Door #1 at the North Entrance doors. Go through the doors on the left side of the deli to enter the 160 hallway. Room 163 is the second classroom on the right.
  • Wrap and Roll

    Come and join in a hands-on experience to learn, prepare, and taste Chinese-American style egg rolls and summer rolls. We will cover the types of wrappers used, different filling ideas, rolling techniques, and ways to cook them. By taking this class, you’ll have a greater appreciation for the variety of egg rolls that there are, as well as how to make them at home.
