  • Banh Mi, From Baguette to Bite

    Banh mi is Vietnam’s iconic sandwich, a delicious fusion of French and Vietnamese culinary traditions. Crisp baguettes are filled with savory meats, fresh and pickled vegetables, herbs, bold spreads, and seasonings to create a sandwich that is both vibrant and satisfying. In this cook-along adventure, you’ll learn to craft banh me from the ground up—baking bakery-quality baguettes, marinating and cooking char siu chicken, quick-pickling colorful vegetables, and mixing a zesty mayo spread before assembling everything into a flavor-packed creation. Prefer to keep it simple? Bring your favorite bakery baguettes and focus on the fillings and assembly. Either way you’ll leave inspired and ready to recreate gourmet bahn me at home.     Kimbap is Korea’s answer to the perfect rice roll—similar in shape to sushi, yet uniquely its own with savory cooked fillings that create distinctive flavors and textures. Join Tess for this, fun filled cook-along adventure and explore the art of making Bulgogi Kimbap rolls from start to finsh, rivaling any you wild find in a restaurant. From seasoning the rice, to marinating and cooking Bulgogi, preparing colorful vegetables (including a quick pickle), and crafting a delicate omelet you’ll bringing everything together into beautiful hand-rolled Kimbap. Along the way, you will discover the key difference between sushi and Kimbap, practice rolling and shaping techniques and enjoy the bold, balanced flavors of your creation. Whether you are a busy home cook or a curious foodie, you will leave with new skills, fresh inspiration, and the confidence to turn simple ingredients into a variety of healthy, delicious, gourmet kimbap.   • California Sushi Roll Extravaganza

    When it comes to traditional sushi that is made with raw sushi grade fish such as salmon or tuna opinions tend to be pretty divided—people are usually either a very strong “yes”, or an equally strong “no”. Enter California Roll: the friendly gateway “Sushi” that has converted countless skeptics to enthusiastic fans! In this fun, interactive cook-along experience, Tess will guide you through the process of making a variety of California rolls that just might have you wondering why you have never tired making them yourself before! California roll combinations are only limited by your imagination! Make them vegetarian or with seafood, with or without seaweed, spicy or mild—it’s all up to you and your creativity. Learn the essentials of preparing seasoned sushi rice, whipping up flavorful spicy mayo, and wrapping, rolling, and shopping your sushi with a range of tasty fillings including a crab salad we will be making with crabsticks. To top it all off, Tess will share simple yet impressive plating and presentation ideas to make your rolls look as good as they taste! Ingredient / Supplies / Equipment Needs in case participants wish to shop ahead of time: Sushi rice, nori / seaweed sheets, toasted sesame oil, (Japanese) rice vinegar. A bamboo sushi-rolling mat can be helpful, but not necessary. Additional ingredients will be listed in the information packet that will be received 3—5 days before the class. Make them for your family for a memorable holiday breakfast or wrap them up with bows and gift them to those you hold dear. After keeping her Copycat Cinnabon® (Cinnamon Roll) recipe a secret for MANY years, Tess has decided to share it EXCLUSIVELY to those that register for this class! She has often been told that her rolls are considered BETTER than actual Cinnabon® rolls. You will love these billowy, warm, luscious, gooey, rolls topped with cream cheese frosting that is out-of-thisworld- delicious. In addition, NEW to her Holiday Dessert class offerings, her version of the Viral Dubai Chocolate Bar! Tess takes the experience to the next level teaching participants how to create their own Kadaifi (shredded phyllo) from SCRATCH costing PENNIES, and her from-scratch version of pistachio cream filling for the chocolate bars! **Equipment needs: A 1” deep silicone Dubai Chocolate Bar mold is needed to create the chocolate bar. The bars can be made with simple melted chocolate. However if a longer lasting shiny finish is preferred, tempering the chocolate is beneficial. If participants wish to temper the chocolate, an instant read kitchen thermometer is needed.   • Crepes: The "Do-Ahead" Wrap

    Crepes are an easy, impressive do-ahead dish. We will prepare Chicken Divan (chicken with broccoli in a cheese sauce) four our main dish. That will be followed up with Cheese Blintzes served with an apricot sauce, and Mushroom Crepes with Sherry Sauce. Orange Crepe Suzette, Italian and Sicilian Cannoli, Flaming Crepes and other desserts will round out our selections. Each student will have lots of experience in making perfect crepes including flipping them!

    Dim Sum is a popular style of Cantonese cuisines that include small dishes that highlight different flavor profiles and cooking techniques. In this online interactive class, we will make cha shu chicken pastry, braised chicken with mushrooms, and vegetables with ginger garlic sauce.
  • Japanese Miso Ramen from Scratch

    This class is not about instant ramen. In fact, we will be making Japanese miso ramen from scratch. We will start with making ramen noodles from scratch. Then, we’ll braise cha shu chicken and make miso broth. We will serve our ramen with marinated soft-boiled eggs and different toppings.
  • Kitchen Herb Garden

    Take the mystery and fear out of growing and cooking with herbs—basil, dill, cilantro, lavender, rosemary, thyme, sage, tarragon, —to name a few. Taste and smell the flavors of these herbs, and discover the role these flavors have when added to everyday or special dishes and cuisines. In this one-hour make-and-take class, we will have an open discussion about herbs, what to do with them and plant a full pot for your patio, or to set by your back door to use for cooking all summer long! Come with questions or ideas to share! Since we are working with soil, please dress appropriately or bring an apron and gloves. If the weather permits, class will be held out on the back deck of the Family Learning Center. Otherwise, class will be held inside in room 204.

    Laksa: Singapore Curry Noodle Soup

    Let's bring a hawker center to your kitchen and learn how to make delicious Singapore laksa from scratch. We will start with making laksa paste from scratch and then turn the paste into the popular Singapore Laksa with chicken, shrimp, and tofu. You can choose to make laksa with just the chicken or just tofu. Nothing can beat homemade laksa!

    Discover the exotic and enticing cuisine of Morocco in this online interactive class. You will learn how to make Moroccan chicken tangine, couscous, and salad. While cooking, we will talk about Moroccan spices, including Ras el Hanout, and varieties of other types of tagine dishes. You do not need a tagine pot to make tagine.
  • Pizza Perfection! Mama’s Focaccia Pan-Style & Pretzel Crust Pizzas

    Pizza night at home will never be the same! Turn your kitchen into your very own pizzeria in this during this cookalong experience with Tess. Together, you will craft two completely different gourmet pizzas from start to finish—each with its own unique dough, sauce, style and flavor. First up: Tess’ Greek-inspired “Mama’s Focaccia Pan-Style Pizza”—a party-sized, soft-crusted favorite enjoyed by Greek families worldwide. Then, take pizza night in a whole new direction with Tess’ Signature Pretzel Crust Pizza, featuring that iconic chewy, salty bite everyone loves. Along the way, you’ll master two types of pizza dough, two scratch-made sauces (one for each style of pizza) and insider tips that will elevate your homemade pizza game to rival any pizzeria. This one-of-a-kind cook-along is about discovering the joy of pizza nights done right, creating pizzas that are fun, flavorful, and endlessly satisfying and memory filled!   • Sourdough

    Sourdough became popular over the last year as a healthier alternative to regular white or whole wheat bread. Although it has comparable nutrients, the lower phytate levels mean it is more digestible and nutritious. The prebiotics also help to keep your gut bacteria happy, and it may be less likely to spike blood sugar levels. Come to this class and make a dozen sourdough muffins and go home with a small amount of starter to continue making sourdough bread. Bring a quart glass jar with a lid to class.

    Let’s learn how to make Spanish tapas, little bites with big flavor in this online interactive class. We will make gambas al ajillo (shrimp with garlic), chorizo braised in red wine tapas, and classic Tortilla Espanola.
  • Sweet Spring Cupcakes

    Celebrate the season together with sweet treats! In this fun, hands-on class, each person will decorate a dozen cheerful spring-themed cupcakes. Learn how to frost, sprinkle, and design colorful creations, plus try your hand at piping pretty roses and flowers if you’d like to explore more advanced techniques. Don’t forget to bring a container, box, or pan so you can take your beautiful (and delicious!) masterpieces home to enjoy. *Please register each person separately. Parent must attend with child.

The people of Senegal, Africa, Cuba, Nova Scotia, and Canada contributed to the medley of flavors using a wealth of local seafood, vegetables, poultry, livestock and pecans.
