    Basic Home Food Preservation

    With the growing season nearly upon us, it's time to learn the basics of home preservation. Homemade jams, spicy salsas, fresh beans and fermented cabbage can all be enjoyed during the cold winter months. Home canning of fresh food provides a number of benefits, including lower grocery bills, sustainable lifestyles and better nutrition through control of the ingredients that go into your food. Once you know the basics, home canning is really quite easy. This class will introduce you to the tools/equipment, food safety and produce/ingredient selection needed to be successful this season and for many years to come.

    In these 90 minutes classes, join Pam as she shares how to make the best dinners; just enough for two! Join the class virtually to cook along or grab a favorite beverage, settle in, and watch how to make a simple supper for two. You will receive the recipes and a ZOOM video link to the class in your confirmation email. Can’t make the class? No worries, we will record the class and email you a link to watch the replay a day after the class. January 18th - Swedish Meatballs with Lingonberry Jam Discover how to make the best Swedish Meatballs packed with a blend of warm spices and smothered in a rich, creamy gravy served with lingonberry jam and pickled cucumbers over a bed of noodles. Learn tips and tricks to make Swedish meatballs and how to make quick Swedish pickled cucumbers. March 14th - Chicken Marsala & Roasted Asparagus Learn how to make Chicken Marsala for Two that is full of flavor – fork tender chicken, crispy pancetta, earthy mushrooms, roasted shallots smothered in a rich Marsala sauce. We will serve this with mashed potatoes and asparagus with a cranberry vinaigrette. April 18th - Skillet Tex Mex Cheese Enchiladas & Key Lime Dessert Looking for meatless Monday dinner inspiration? We will make skillet Tex-Mex Cheese Enchiladas for Two - featuring gooey melted cheese and a rich, smoky, but mellow enchilada sauce – it’s sure to convince the most die-hard meat-lovers to try meatless. For Dessert we will whip up Key Lime Dessert Cups they have all the elements of a classic key lime pie – citrusy custard, toasted graham crackers and whipped cream.
  • Homemade Tuscan Gnocchi Meal!-Virtual

    Creamy Tuscan Gnocchi with Chicken & Homemade Bread! Gnocchi: Bite-sized tender soft pillows of pasta-ish goodness. Very versatile with the ability to take on the flavor of added goodness creating mouthwatering meals that will become favorites in your family’s dinner rotation. This may just sound too good to be true. Not only is this all true, but gnocchi are even simpler to make than other fresh pasta options! During this fun filled class, participants will learn how to create these little morsels of goodness, and then turn them into a scrumptious meal the instructor has created called Creamy Tuscan Gnocchi with Chicken, and make a wonderful loaf of fresh bread as well! Have some fun participating in this virtual Cook-Along class as we dive into the world of gnocchi! Follow along step-by-step, with our wonderful instructor as she guides you through the simple pleasure of creating these delicious tender bites of goodness. Then follow along and create a wonderful meal with them that will have your family asking for more! Have your questions answered by the instructor, interact with other participants as you cook-along, and increase your confidence in the kitchen with each skill that is learned, and each little bit of advice and instruction that is shared. While cooking-along is loads of fun, it is optional. Participants will receive a list of ingredients in advance of the class to allow enough time for shopping and preparation. A professionally made PDF packet of the Instructors Personal Recipes from this class will also be received. This class will take place on ZOOM; free on-line software. Participants will receive instructions on how to access the class prior to it starting. As an added bonus, the instructor has created a private group and a public group on Facebook for participants of her cooking classes. Everyone will receive an invite to the groups although joining is optional. Come join the fun! Taste and smell the flavors of these herbs, and discover the role these flavors have when added to everyday or special dishes and cuisines. In this one-hour make-and-take class, we will have an open discussion about herbs, what to do with them and plant a full pot for your patio. Or to set by your back door to use for cooking all summer long! Come with questions or ideas to share! Since we are working with soil, please dress appropriately or bring an apron and gloves.

Choice of meat (chicken or pork) & veggies will fill the CRISPY spring rolls, and fresh veggie and precooked protein of choice will fill the FRESH spring rolls. Two types of wrappers will be used.     Tantalizing Thai Cuisine (Participation)

    You’ll begin by preparing Vietnamese summer rolls (fresh) served with both hoisin and peanut sauce for dipping. Included are Vietnamese spring rolls (fried) with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles, breast of chicken, eggs, chilies, garlic, basil, scallions, bean sprouts, and more. For dessert, Thai lime custard topped with fresh whipped cream.

    The Art of Sushi

    Come explore the world of sushi as you create this Japanese delicacy yourself. We'll begin by preparing the coveted sushi rice then you'll learn the art of "nigiri-sushi" (hand molded rice) topped with shrimp, unagi and ahi tuna. You'll then learn how to prepare "maki-sushi" using a bamboo mat to roll rice with various fillings in and around Nori (seaweed sheets). Option and accompaniments will include: surimi, cucumber, avocado, cream cheese, teriyaki chicken, tempura onions, spicy mayo, eel sauce, wasabi, pickled ginger and soy sauce.
