    Asian Favorites

    You'll begin by preparing delicious egg rolls stuffed with pork, shrimp and vegetables served with both hot mustard and sweet and sour sauce for dipping. You'll then prepare fried rice using chicken, shrimp, fresh veggies and secret sauce. Classic pork Chow Mein follows, served with crispy egg noodles and egg foo young made with both chicken and shrimp.

    Basic Home Food Preservation

    With the growing season nearly upon us, it's time to learn the basics of home preservation. Homemade jams, spicy salsas, fresh beans and fermented cabbage can all be enjoyed during the cold winter months. Home canning of fresh food provides a number of benefits, including lower grocery bills, sustainable lifestyles and better nutrition through control of the ingredients that go into your food. Once you know the basics, home canning is really quite easy. This class will introduce you to the tools/equipment, food safety and produce/ingredient selection needed to be successful this season and for many years to come.
  • Chateaubriand (Demonstration Class)

    We’ll start with delightful autumn salad tossed with crispy granny apples, candied walnuts, feta cheese and dried cranberries in a raspberry vinaigrette. Featuring “Chateaubriand” beef tenderloin seared, roasted, and served with amazing sauces including, béarnaise, bordelaise, and pepper sauce. Accompaniments will include creamy potatoes au gratin, tomatoes provencal and fresh steamed asparagus tossed with olive oil and fresh squeezed lemon. We’ll finish with crème caramel, an exquisite homemade custard served in a pool of caramel. In this demonstration class, students will help with execution and clean up.
  • Chicken En Croute

    Begins with a classic Caesar salad using fresh baked croutons, Romano cheese and sweet cherry tomatoes. You'll assemble the entree wrapping tender breast of chicken in flaky puff pastry with shallots and portobello mushrooms. Together we'll prepare an amazing sauce using sweet port wine. Sides will include asparagus with olive oil and fresh squeezed lemon along with a delicious Jasmine rise blend using toasted almonds and dried cranberries. We will finish with chocolate decadence, a rich flourless chocolate torte served with an exquisite raspberry sauce and fresh whipped cream.

    Gnocchi: Bite-sized tender soft pillows of pasta-ish goodness. Very versatile with the ability to take on the flavor of added goodness creating mouthwatering meals that will become favorites in your family’s dinner rotation. This may just sound too good to be true. Not only is this all true, but gnocchi are even simpler to make than other fresh pasta options! During this fun filled class, participants will learn how to create these little morsels of goodness, then turn them into a scrumptious meal the instructor has created called Creamy Tuscan Gnocchi with Chicken, and make a wonderful loaf of fresh bread as well! Have some fun participating in this virtual Cook-Along class as we dive into the world of gnocchi! Follow along step-by-step, with our wonderful instructor as she guides you through the simple pleasure of creating these delicious tender bites of goodness.   • Czech Kolaches

    Kolaches are one of Czechoslovakia’s national pastries. Immigrants brought their passion (and recipes) for kolaches to the Midwest as early as the 1860's. Kolaches are marvelous egg-rich, slightly sweet yeast dough. Traditionally filled with fruit mixtures such as apricot, cottage cheese, poppy seed or prune; they can be shaped into small rounds, square "tied packages", or filled turnovers. We will make variations in class and taste samples. Plan to take home an assortment to share with family, friends or to freeze. You will also leave with many recipes, tips and techniques to master these Old-World delicacies. Better than the bakery! Supply fee of $15 due to instructor in class.

    What makes a Focaccia a Focaccia, a Stromboli a Stromboli, and a Calzone a Calzone? How are they different? How are they the same? Discover the answer to these questions as you participate in this fun-filled Cook-Along Class as we dive into the world of unique Rolled & Stuffed Pizzas, and marvelous focaccia bread! Learn how to make your own homemade focaccia Bread, a wonderful rolled pizza called a Stromboli, and stuffed pizzas known as Calzones with homemade pizza dough! Experience the rave reviews from previous participants of the instructor’s pizza classes yourself as you learn how to make your own pizzas with her step-by-step instruction. Take out Pizza may just become a thing of the past! On the Menu: Stromboli (rolled / filled pizza), Calzones (stuffed pizza), wonderful Focaccia Bread, and an OUT-OF-THIS-WORLD Pizza Sauce. TWO different homemade doughs will be used. One will be for the pizza options, the other for the focaccia. The instructor will provide Step-by-step guidance and instruction help to ensure the process is a simple as can be. Participants can personalize their pizzas and focaccia bread with toppings and fillings of their choosing. All recipes have been created by the instructor, and tested time and time again over the years, to ensure maximum flavor and ease. Choose which ones you would like to make and watch a demonstration of the others or if you feel up to it, make them all!   • Four Famous Ethnic Cookies

    Learn to create the rolled Norwegian cookie, Krumkakes, made with cream, butter and cinnamon or sometimes flavored with vanilla. Italian Pizzelles are also baked on the top of the stove using an iron but are a flat, anise-flavored cookies sometimes flavored with vanilla. The chewy, almond Swedish Sandbakkelse are delicate golden brown in color and are baked in tiny tins to resemble tarts. Finally, we will master deep fried Rosettes-those exceedingly fragile, paper thin Scandinavian delicacies dusted with confectioners' sugar. Expect great recipes plus the many tips and techniques that will make your baking a success! Please bring containers to bring your creations safely home. $13 food fee paid to instructor at class.

Muffins (and their larger-sized quick breads) may be sweet and savory. Adjust the baking time (less than 30 minutes) for muffins to less than 1 hour for quick breads and a single recipe yields both! We'll feature remarkable recipes to taste in class and take home PLUS tips, techniques and equipment to ensure success every time. Recipes include: Blueberry, Cinnamon Crunch, Bran-Corn, Dried Cherry, Fresh Ginger, Golden Raisin, Maple Sour Cream, Sliced Fresh Lemon plus Flavored Butters and a variety of Glazes/Toppings.     Tantalizing Thai Cuisine

    You'll begin by preparing Vietnamese summer rolls served with both hoisin and peanut sauce for dipping. Vietnamese spring rolls follow with pork, shrimp and glass noodles stuffed in rice paper and fried to a golden brown, served with the classic nuoc cham dipping sauce. You'll then prepare Pad Thai, blending the vibrant flavors of Thailand with rice noodles using shrimp, eggs, chilies, garlic, basil, scallions, bean sprouts, sesame oil, lemon and crushed red pepper flakes. For dessert a Thai lime custard topped with fresh whipped cream.

    The Art of Sushi

    Come explore the world of sushi as you create this Japanese delicacy yourself. We'll begin by preparing the coveted sushi rice then you'll learn the art of "nigiri-sushi" (hand molded rice) topped with shrimp, unagi and ahi tuna. You'll then learn how to prepare "maki-sushi" using a bamboo mat to roll rice with various fillings in and around Nori (seaweed sheets). Option and accompaniments will include: surimi, cucumber, avocado, cream cheese, teriyaki chicken, tempura onions, spicy mayo, eel sauce, wasabi, pickled ginger and soy sauce.
  • Traditional Italian Cuisine

    Enjoy the marvelous flavors of traditional Italian cuisine starting with "Panzanella", a toasted bread salad with refreshing summer vegetables in a light vinaigrette. You'll prepare "chicken saltimbocca" using thin sliced prosciutto ham and fresh sage in a lemon, caper, artichoke butter sauce. You'll make potato gnocchi (Italian dumplings) then we'll toss them in a medley of sauces including, basil pesto, marinara and brown butter with sage and walnuts We'll finish with "Cannoli", fried pastry filled with sweetened ricotta and mascarpone cheeses, served on a pool of chocolate sauce, garnished with pistachios.

Make them to share, or better yet, create memories by learning to create these sweets with your children or significant others. They are sure to become family favorites for any time of the year, but fondly remembered on Valentine’s Day! Similar to her Copycat Cinnabon Recipe, the instructor has kept her Strawberry Cream Cheese Roll recipe a secret for MANY years and has decided to share it for the first time with those that register for this class! She shares her secret for creating her wonderfully soft melt-in-your-mouth cream cheese dough full of sweet flavor, and her versatile strawberry sauce. Anyone who is lucky to taste them will love these billowy, luscious, fruity, gooey, rolls topped with wonderful drizzle and chocolate. Also, if interested, learn how to create a rich velvety chocolaty dessert known as Kit Kat Cheesecake as the strawberry rolls are rising! It is a no-bake dessert, so requires some secret finessing, to ensure the filling sets. The instructor will share her method for stabilizing the filling so that it stays velvety and sets up so that slick slices are created with every cut without loosing its shape or collapsing!
