    You'll begin by preparing delicious egg rolls stuffed with pork, shrimp and vegetables served with both hot mustard and sweet and sour sauce for dipping. You'll then prepare fried rice using chicken, shrimp, fresh veggies and secret sauce. Classic pork chow mein follows, served with crispy egg noodles and egg foo young made with both chicken and shrimp. We'll finish this extravaganza with a delightful lemon custard tort.

    Basic Home Food Preservation

    With the growing season nearly upon us, it's time to learn the basics of home preservation. Homemade jams, spicy salsas, fresh beans and fermented cabbage can all be enjoyed during the cold winter months. Home canning of fresh food provides a number of benefits, including lower grocery bills, sustainable lifestyles and better nutrition through control of the ingredients that go into your food. Once you know the basics, home canning is really quite easy. This class will introduce you to the tools/equipment, food safety and produce/ingredient selection needed to be successful this season and for many years to come.
  • Bodacious Brunch Buffet (Demonstration)

    We'll begin with tender scones riddled with fresh berries and white chocolate. The quintessential fresh fruit salad follows with a delightful sauce for dipping. Featured are both crab cakes with basil aioli and coconut shrimp with a zippy marmalade. You'll learn to prepare quiche using a delicious combination of veggies, meats, and cheeses baked in a flaky pastry crust. Also, a twist on eggs benedict using poached eggs stacked on toasted brioche with black forest ham and velvety hollandaise sauce. French toast finishes this extravaganza using fresh baked croissants soaked in a rich bath of custard, sautéed to a honey brown crispness and topped with pure maple syrup and fresh whipped cream.

    This class will focus on all of those wonderful menu ideas that you have always wanted to know how to master...easily. We'll begin with the basic Cheese Souffle (and loads of tips/techniques for perfection.), easy Eggs Benedict Casserole, Cheese Strata, Italian Frittata with zucchini, a Japanese-style puffy baked Pancake traditionally served with lemon and confectioner's sugar, Quiche Lorraine and Greek Spanakopeta (Spinach Pie). Round out your class with accompaniments which include: a Biscotti-like Anise Toast, crunchy Bran-Corn Bread, traditional Cream Scones, quick 'Dropped Biscuit Scone Muffins', and a beautiful Pineapple Boat filled with assorted fresh fruits. And to drink; a Strawberry Fruit Smoothie plus the recipe for fresh Tangerine or Orange Mimosas. All lovely in appearance, but even better in taste! Supply fee of $13 due to instructor in class.

Join the class virtually to cook along or grab a favorite beverage, settle in, and watch how to make a simple supper for two. January 18th - Swedish Meatballs with Lingonberry Jam Discover how to make the best Swedish Meatballs packed with a blend of warm spices and smothered in a rich, creamy gravy served with lingonberry jam and pickled cucumbers over a bed of noodles. Learn tips and tricks to make Swedish meatballs and how to make quick Swedish pickled cucumbers. March 14th - Chicken Marsala & Roasted Asparagus Learn how to make Chicken Marsala for Two that is full of flavor – fork tender chicken, crispy pancetta, earthy mushrooms, roasted shallots smothered in a rich Marsala sauce. We will serve this with mashed potatoes and asparagus with a cranberry vinaigrette. April 18th - Skillet Tex Mex Cheese Enchiladas & Key Lime Dessert Looking for meatless Monday dinner inspiration? We will make skillet Tex-Mex Cheese Enchiladas for Two - featuring gooey melted cheese and a rich, smoky, but mellow enchilada sauce – it’s sure to convince the most die-hard meat-lovers to try meatless. For Dessert we will whip up Key Lime Dessert Cups they have all the elements of a classic key lime pie – citrusy custard, toasted graham crackers and whipped cream.
  • Czech Kolaches

    Kolaches are one of Czechoslovakia’s national pastries. Immigrants brought their passion (and recipes) for kolaches to the Midwest as early as the 1860's. Kolaches are marvelous egg-rich, slightly sweet yeast dough. Traditionally filled with fruit mixtures such as apricot, cottage cheese, poppy seed or prune; they can be shaped into small rounds, square "tied packages", or filled turnovers. We will make variations in class and taste samples. Plan to take home an assortment to share with family, friends or to freeze. You will also leave with many recipes, tips and techniques to master these Old-World delicacies. Better than the bakery! Supply fee of $15 due to instructor in class.
  • Family Style Italian Cuisine (Participation)

    You'll be preparing chicken cacciatore using fresh chopped garlic, sweet basil, red onion, mushrooms and capers simmered in a delightful marinara sauce. You'll enjoy beef braciole stuffed with prosciutto ham and parmesan cheese in a savory burgundy sauce. We'll pair these delicacies with creamy garlic mashed potatoes, tender green beans tossed in olive oil with lemon and plenty of bruschetta for dipping. We'll finish with Crème Brûlée,a rich creamy custard with a caramel crust.

    Creamy Tuscan Gnocchi with Chicken & Homemade Bread! Gnocchi: Bite-sized tender soft pillows of pasta-ish goodness.     Tantalizing Thai Cuisine (Participation)

    You’ll begin by preparing Vietnamese summer rolls (fresh) served with both hoisin and peanut sauce for dipping. Included are Vietnamese spring rolls (fried) with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai blending the vibrant flavors of Thailand with rice noodles, breast of chicken, eggs, chilies, garlic, basil, scallions, bean sprouts, and more. For dessert, Thai lime custard topped with fresh whipped cream.

    Food in the U.S. deep south was influenced by a medley of flavors using a wealth of local seafood, vegetables, poultry, livestock and of course, pecans. Join us in creating a memorable meal to include: Crab Dip, traditional Cheese Straws, Gumbo, Jambalaya, Red Beans & Rice, Buttermilk Biscuits, Cheese Grits, Pecan Praline candy and traditional Bread Pudding.
