  • Four Famous Ethnic Cookies

    Learn to create the rolled Norwegian cookie, Krumkakes, made with cream, butter and cinnamon or sometimes flavored with vanilla. Italian Pizzelles are also baked on the top of the stove using an iron but are a flat, anise-flavored cookies sometimes flavored with vanilla. The chewy, almond Swedish Sandbakkelse are delicate golden brown in color and are baked in tiny tins to resemble tarts. Finally, we will master deep fried Rosettes-those exceedingly fragile, paper thin Scandinavian delicacies dusted with confectioners' sugar. Expect great recipes plus the many tips and techniques that will make your baking a success! Please bring containers to bring your creations safely home. $13 food fee paid to instructor at class.   • Holiday Cookie-Tin Treats

    Homemade cookies and treats are always a wonderful thoughtful gift around the holidays and throughout the year as well. Continue a tradition that has spanned generations or start a new one by participating in one or all of these classes designed to help fill your holiday cookie tins for gifting! The ones lucky enough to receive a cookie tin from you will be remembering your treats for months beyond the holidays! Make it a family-fun affair and have your children or significant other join you! You will feel like a professional baker, and will more than likely end up making these treats throughout the year…. But SHHHHHH! Each one of these recipes is one of the instructors’ personal secrets that she is sharing for the first time outside of her own home! Start early to prevent a rush as the holidays draw nearer and nearer. Tips for freezing these treats will also be shared. Participants will receive an ingredient list / station prep handout a week before class. Participants will also receive a PDF of the instructor’s recipes used for each of the classes. The length of each class will be determined by the amount of time needed for each of the recipes. Time may go a little longer or a little shorter! Come join in the fun! (Any favorite preserve may be substituted for raspberry) December 1st - Cheese-Cake Stuffed Chocolate Chip Cookies & Brownie Drop Cookie *On the Menu: Cheese-Cake Stuffed Chocolate Chip Cookies, & Brownie Drop Cookies December 8th - Jam Filled Vanilla Thumbprint Cookies & Cookie-Butter Blossoms *On the Menu: Jam Filled Vanilla Thumbprint Cookies, & Cookie-Butter Blossoms! *NOTE: Be sure to purchase some Biscoff Cookie Butter ASAP, and keep it hidden, or buy extra as it will not last long! December 15th - Hot Cocoa Bombs & Holiday Cookie Bake and Decorate-Foundations of Royal Icing *On the Menu: Hot Cocoa Bombs! & we will be creating decorating pre-baked, cooled sugar cookies! A Cocoa Bomb Silicone Mold will be needed for this class. Available at most craft stores, as well as online. A week before the class, participants will receive a recipe packet containing 2 of the instructor’s favorite sugar cookie recipes, what will be needed for the Royal Icing and for decorating. Participants will bake their choice of sugar cookies before class using the recipes provided and be ready to create the Royal Icing with the instructor. Together we will learn decorating tips to decorate their own cookies!
  • Instant Pot® Creamy Chicken & Wild-Rice Soup, Chicken & White Bean Chili, and Rolls

    Have some fun participating in this virtual Instant Pot® COOK-ALONG class! Two dishes will be made during this class. Choose one for your cook-along, and watch a demonstration of the other or if you have a second Instant Pot® on hand, make both! The recipe options for this class are a Minnesota classic Creamy Chicken & Wild Rice Soup, and Chicken and White Bean Chili! We will also be making some wonderful rolls from scratch! Both delicious recipes that will become family favorites guaranteed! Both delicious recipes are made with ingredients that are probably already on hand. Experience how these culinary creations are taken to another level using the Instant Pot®! Make lasting memories in your kitchen if you decide to have your children, your spouse or your partner join you! Children absolutely love getting involved in the kitchen and will enjoy creating these dishes with you as well. Have your questions answered by the instructor, interact with other participants as you cook-along, and increase your confidence in using your electric pressure cooker. While cooking along is loads of fun, it is optional. Participants will receive a list of ingredients at least a week in advance of the class to allow time for shopping. If the instructor’s personal recipes are used for this class, they will be shared as a professionally made PDF. If recipes used are on-line, links to these recipes will be shared. This class will take place on Zoom; a free on-line software. Participants will receive instructions on how to access the class prior to it starting. As an added bonus, the instructor has created a private group on Facebook for participants of her cooking classes. Everyone will receive an invite to the group although joining is optional. The group will provide an opportunity for members to ask questions, share their own creations, interact with other participants and support each other on their Instant Pot® journey.     This wonderful Norwegian delicacy is made for banquets, holidays, weddings and all special occasions. If you are Norwegian and missed recording Grandma's recipe, tips and techniques - this is the class for you! Note: other nationalities find Lefse delicious too. Learn the fine points in making the dough, baking, storing and of course how to serve Lefse, bonus is a bit of history and humor too. We will begin with real potatoes using a number of authentic recipes and a modern version using instant potatoes. Plan to sample your fresh, warm creations with traditional fillings plus take home finished Lefse and dough to bake then share with family/friends. $9 food fee paid to instructor night of class.   • Traditional Italian Cuisine

    Enjoy the marvelous flavors of traditional Italian cuisine starting with "Panzanella", a toasted bread salad with refreshing summer vegetables in a light vinaigrette. You’ll prepare “chicken saltimbocca” using thin sliced prosciutto ham and fresh sage in a lemon, caper, artichoke butter sauce. You’ll make potato gnocchi (Italian dumplings) then we’ll toss them in a medley of sauces including, basil pesto, marinara and brown butter with sage and walnuts. We'll finish with "Cannoli", fried pastry filled with sweetened ricotta and mascarpone cheeses, served on a pool of chocolate sauce, garnished with pistachios. Join us!
